Cambodian Lime Pepper Dipping Sauce

Cambodian lime pepper dipping sauce is one of the simplest ways to taste the difference between regular pepper and Kampot pepper. It is bright, salty, peppery, and fresh — the kind of sauce that makes grilled meat, seafood, eggs, or even plain rice taste better.
In Cambodia, this sauce is often served with dishes like Beef Lok Lak, grilled chicken, seafood, and fried eggs. The ingredients are simple, so the quality of the pepper matters. Freshly cracked Black Kampot Pepper gives the sauce a warm aroma and clean heat that stands out right away.
Ingredients
2 tablespoons fresh lime juice
½ teaspoon salt, or to taste
1 teaspoon freshly cracked Black Kampot Pepper
½ teaspoon sugar, optional
1 small garlic clove, finely minced, optional
Thinly sliced fresh chili, optional
Instructions
1. Crack the pepper fresh
Grind or crack the Black Kampot Pepper right before making the sauce.
Freshly cracked pepper gives the sauce more aroma, warmth, and flavor than pre-ground pepper.
2. Mix the sauce
In a small bowl, combine fresh lime juice, salt, and freshly cracked Black Kampot Pepper.
Stir until the salt dissolves.
3. Adjust the flavor
Taste the sauce. It should be bright, salty, and peppery.
Add a little sugar if you want to soften the sharpness of the lime. Add garlic for more depth, or fresh chili if you want more heat.
4. Serve
Serve immediately with grilled beef, chicken, shrimp, crab, fish, eggs, rice, or fresh vegetables.
This sauce is best made fresh, right before eating.

Use fresh lime juice: Bottled lime juice will not give the same clean, bright flavor.
